Greek Turkey Burgers

Ingredients
- ⅓ cup sun-dried tomatoes
- 1 large red onion
- 1 (20-oz) pkg 93% lean ground turkey
- 4 cloves garlic, minced
- 2 Tbsp salt-free Greek seasoning
- ¾ cup crumbled fat-free feta cheese, divided
- 3 Tbsp light mayonnaise
- 6 (1.5-oz) whole wheat hamburger buns, toasted
- 3 Roma tomatoes, sliced
- 1½ cups baby arugula (or use baby spinach)
Instructions
- Soak tomatoes in very hot water 5 minutes; drain well, and chop.
- Cut onion into thin rings; finely chop enough onion to yield ¾ cup, and set aside remaining onion slices as a topping.
- Combine turkey, ¾ cup chopped onion, sun-dried tomatoes, garlic, Greek seasoning, and ¼ tsp salt; mix with hands. Stir in ⅓ cup cheese. Shape mixture into 6 large patties.
- Heat a skillet coated with cooking spray over medium-high heat; add patties, and cook 5 minutes per side or until no longer pink in centers.
- Spread mayonnaise on buns; serve burgers on buns with tomato slices, onion rings, arugula, and remaining cheese.
