Ingredients

  • 2 (6-oz) boneless, skinless chicken breasts
  • 2 tsp olive oil
  • ½ cup marinara sauce
  • ½ cup shredded mozzarella cheese
  • ¼ cup pepperoni
  • 3 Tbsp sliced black olives
  • 1 green onion, sliced

Instructions

  1. Preheat broiler. Cook chicken in hot oil in a skillet over medium-high heat 5 to 6 minutes per side or until browned.
  2. Transfer chicken to a 9-inch broiler-proof dish. Top chicken with marinara sauce, cheese, pepperoni, and olives.
  3. Broil 2 to 3 minutes or until cheese melts. Sprinkle with onion.

  • 3 cups chopped romaine lettuce
  • 1 tomato, chopped
  • ¼ cup chopped red onion
  • 3 Tbsp sliced pepperoncini
  • 2 Tbsp olive oil vinaigrette
