Ingredients
- 2 (6-oz) boneless, skinless chicken breasts
- 2 tsp olive oil
- ½ cup marinara sauce
- ½ cup shredded mozzarella cheese
- ¼ cup pepperoni
- 3 Tbsp sliced black olives
- 1 green onion, sliced
Instructions
- Preheat broiler. Cook chicken in hot oil in a skillet over medium-high heat 5 to 6 minutes per side or until browned.
- Transfer chicken to a 9-inch broiler-proof dish. Top chicken with marinara sauce, cheese, pepperoni, and olives.
- Broil 2 to 3 minutes or until cheese melts. Sprinkle with onion.

- 3 cups chopped romaine lettuce
- 1 tomato, chopped
- ¼ cup chopped red onion
- 3 Tbsp sliced pepperoncini
- 2 Tbsp olive oil vinaigrette
