Mexican Tortilla Pizzas

Ingredients

  • ¾ cup refried beans (or use refried black beans)
  • 4 soft taco-size flour tortillas
  • ⅔ cup shredded Mexican-blend cheese
  • ¼ cup red enchilada sauce
  • 1 Roma tomato, chopped
  • ¼ cup sliced black olives
  • 1 green onion, sliced

Instructions

  1. Preheat 400°F. Spread beans on 2 tortillas on a baking sheet; sprinkle with ⅓ cup cheese. Top with 2 tortillas. Spread enchilada sauce on tortilla stacks; top with ⅓ cup cheese. Bake 5 minutes or until cheese melts.
  2. Top with tomato, olives, and onion.
