Chicken and Artichoke Quesadillas

Ingredients

  • 4 soft taco-size whole wheat tortillas
  • 1 (6.5-oz) jar quartered marinated artichoke hearts, drained and chopped
  • 2 tomatoes, chopped
  • 1½ cups shredded rotisserie chicken breast 
  • ⅔ cup crumbled feta cheese
  • 1 Tbsp olive oil

Instructions

  1. Top half of each tortilla with artichokes, tomatoes, chicken, and cheese. Fold in half over filling.
  2. Cook quesadillas, in 2 batches, in ½ Tbsp hot oil per batch in a large nonstick skillet over medium heat 2 to 3 minutes per side or until browned and crisp.

Side Dish Ingredients

  • 2 cups seedless red grapes

Side Dish Instructions

  1. Chill grapes until ready to serve.
