Chicken Nacho Bowls
Ingredients
- 1 cup shredded rotisserie chicken
- ⅓ cup green chile enchilada sauce
- 1 (15-oz) can low-sodium black beans, drained and rinsed
- 4 oz baked tortilla chips
- ¾ cup shredded reduced-fat Mexican blend cheese
- ½ cup fresh salsa
- ½ cup reduced-fat sour cream
Instructions
- Stir together chicken, enchilada sauce, and beans in a microwavable bowl. Microwave 2 minutes or until thoroughly heated.
- Divide chips among 4 bowls. Top with chicken mixture, and cheese. Serve with salsa and sour cream.
