Chicken Nacho Bowls

Ingredients

  • 1 cup shredded rotisserie chicken
  • ⅓ cup green chile enchilada sauce
  • 1 (15-oz) can low-sodium black beans, drained and rinsed
  • 4 oz baked tortilla chips
  • ¾ cup shredded reduced-fat Mexican blend cheese
  • ½ cup fresh salsa
  • ½ cup reduced-fat sour cream

Instructions

  1. Stir together chicken, enchilada sauce, and beans in a microwavable bowl. Microwave 2 minutes or until thoroughly heated.
  2. Divide chips among 4 bowls. Top with chicken mixture, and cheese. Serve with salsa and sour cream.
