Cowboy Casserole
Zesty Romaine SaladIngredients
- 1½ lb ground beef
- 1½ lb Yukon Gold potatoes, cubed
- 1 (16-oz) container fresh salsa
- 1 (15-oz) can great Northern beans, drained and rinsed
- 1 (15-oz) can Ranch-style beans
- 1 (10.75-oz) can cream of mushroom soup
- 1 Tbsp chili powder
- 1½ cups shredded Cheddar cheese
Instructions
- Cook beef in a large skillet over medium heat 8 minutes or until browned and crumbly; drain and transfer to a 5- to 7-quart slow cooker.
- Stir in all remaining ingredients except cheese.
- Cover and cook on LOW 8 to 10 hours or until potatoes are tender. Sprinkle with cheese; cover until cheese melts.
Side Dish Ingredients
- ¾ cup Ranch dressing
- 1 tsp chili powder
- 1 (10-oz) pkg chopped romaine lettuce
- 2 tomatoes, chopped
Side Dish Instructions
- Stir together dressing and chili powder in a small bowl.
- Toss together lettuce and tomatoes. Drizzle with dressing.
