Ingredients

  • 1½ lb ground beef
  • 1½ lb Yukon Gold potatoes, cubed
  • 1 (16-oz) container fresh salsa
  • 1 (15-oz) can great Northern beans, drained and rinsed
  • 1 (15-oz) can Ranch-style beans
  • 1 (10.75-oz) can cream of mushroom soup
  • 1 Tbsp chili powder
  • 1½ cups shredded Cheddar cheese

Instructions

  1. Cook beef in a large skillet over medium heat 8 minutes or until browned and crumbly; drain and transfer to a 5- to 7-quart slow cooker.
  2. Stir in all remaining ingredients except cheese.
  3. Cover and cook on LOW 8 to 10 hours or until potatoes are tender. Sprinkle with cheese; cover until cheese melts.

Side Dish Ingredients

  • ¾ cup Ranch dressing
  • 1 tsp chili powder
  • 1 (10-oz) pkg chopped romaine lettuce
  • 2 tomatoes, chopped

Side Dish Instructions

  1. Stir together dressing and chili powder in a small bowl.
  2. Toss together lettuce and tomatoes. Drizzle with dressing.
