Sloppy Joe-Topped Mashed Potatoes

Ingredients

  • 2 lb plant-based ground beef
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 (8-oz) can tomato sauce
  • ¾ cup ketchup
  • 3 Tbsp brown sugar
  • 3 Tbsp chili powder
  • 1 tsp ground cumin
  • 2 (24-oz) pkg refrigerated mashed potatoes
  • 1½ cups shredded Cheddar cheese

Instructions

  1. Cook plant-based beef in a large skillet over medium heat 8 minutes or until browned and crumbly; drain well. Transfer to a 5- to 7-quart slow cooker.
  2. Stir in bell pepper, onion, garlic, tomato sauce, ketchup, sugar, chili powder, and cumin.
  3. Cover and cook on LOW 8 to 10 hours. Reserve 3 cups plant-based beef mixture for Sloppy Joe Pizza recipe.
  4. Heat potatoes according to package directions; divide among 6 plates.
  5. Spoon remaining plant-based beef mixture over potatoes; sprinkle with cheese.

  • 1 Tbsp olive oil
  • 1 lb broccoli, cut into florets
  • ½ cup water
  • 1 tsp lemon zest
  • 1½ Tbsp lemon juice
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook broccoli and water, covered, in hot oil in a large skillet over medium-high heat 3 minutes.
  2. Uncover and cook until broccoli is crisp-tender; stir in lemon zest, lemon juice, salt, and pepper.
