Sloppy Joe-Topped Mashed Potatoes
Lemon Broccoli
Ingredients
- 2 lb plant-based ground beef
- 1 green bell pepper, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 (8-oz) can tomato sauce
- ¾ cup ketchup
- 3 Tbsp brown sugar
- 3 Tbsp chili powder
- 1 tsp ground cumin
- 2 (24-oz) pkg refrigerated mashed potatoes
- 1½ cups shredded Cheddar cheese
Instructions
- Cook plant-based beef in a large skillet over medium heat 8 minutes or until browned and crumbly; drain well. Transfer to a 5- to 7-quart slow cooker.
- Stir in bell pepper, onion, garlic, tomato sauce, ketchup, sugar, chili powder, and cumin.
- Cover and cook on LOW 8 to 10 hours. Reserve 3 cups plant-based beef mixture for Sloppy Joe Pizza recipe.
- Heat potatoes according to package directions; divide among 6 plates.
- Spoon remaining plant-based beef mixture over potatoes; sprinkle with cheese.
Side Dish Ingredients
- 1 Tbsp olive oil
- 1 lb broccoli, cut into florets
- ½ cup water
- 1 tsp lemon zest
- 1½ Tbsp lemon juice
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Cook broccoli and water, covered, in hot oil in a large skillet over medium-high heat 3 minutes.
- Uncover and cook until broccoli is crisp-tender; stir in lemon zest, lemon juice, salt, and pepper.
