Apple-Cinnamon Pancakes

Ingredients

  • 1 cup high-protein pancake mix
  • ¼ tsp ground cinnamon
  • 1 cup low-fat buttermilk
  • 1 Tbsp honey
  • 1 tsp lemon juice
  • 1 large egg
  • 1 Tbsp butter
  • 1 apple, peeled, cored, and finely chopped
  • ¼ cup pure maple syrup

Instructions

  1. Whisk together pancake mix and cinnamon in a large bowl.
  2. Whisk buttermilk, honey, lemon juice, eggs, and butter in a second bowl until blended. Add to flour mixture, whisking until smooth. Stir in apples.
  3. Spray griddle or large nonstick skillet with cooking spray; heat to medium-high.
  4. Pour about 3 Tbsp batter per pancake onto hot skillet or griddle. Cook until tops are covered with bubbles; turn and cook other side.
  5. Serve pancakes with syrup.
