Apple-Cinnamon Pancakes

Ingredients
- 1 cup high-protein pancake mix
- ¼ tsp ground cinnamon
- 1 cup low-fat buttermilk
- 1 Tbsp honey
- 1 tsp lemon juice
- 1 large egg
- 1 Tbsp butter
- 1 apple, peeled, cored, and finely chopped
- ¼ cup pure maple syrup
Instructions
- Whisk together pancake mix and cinnamon in a large bowl.
- Whisk buttermilk, honey, lemon juice, eggs, and butter in a second bowl until blended. Add to flour mixture, whisking until smooth. Stir in apples.
- Spray griddle or large nonstick skillet with cooking spray; heat to medium-high.
- Pour about 3 Tbsp batter per pancake onto hot skillet or griddle. Cook until tops are covered with bubbles; turn and cook other side.
- Serve pancakes with syrup.
