Ingredients

  • 1 lb plant-based ground beef 
  • 1 cup sliced mushrooms
  • ½ onion, chopped
  • 2 cloves garlic, minced
  • ½ (16-oz) pkg tricolor coleslaw 
  • 2 green onions, chopped
  • ¼ cup low-sodium soy sauce
  • 1 Tbsp sesame oil
  • 1½ tsp grated ginger
  • 1½ tsp rice vinegar
  • 1 tsp Sriracha hot sauce
  • ¼ cup chopped fresh basil

Instructions

  1. Cook plant-based beef, mushrooms, onion, and garlic in a large nonstick skillet over medium heat, stirring until plant-based beef is browned and crumbly. Drain and return to skillet. Stir in coleslaw and green onions.
  2. Whisk together soy sauce, oil, ginger, vinegar, and Sriracha; add to skillet. Cook 5 minutes or until cabbage wilts; stir in basil.
