Egg Roll in a Bowl

Ingredients
- 1 lb plant-based ground beef
- 1 cup sliced mushrooms
- ½ onion, chopped
- 2 cloves garlic, minced
- ½ (16-oz) pkg tricolor coleslaw
- 2 green onions, chopped
- ¼ cup low-sodium soy sauce
- 1 Tbsp sesame oil
- 1½ tsp grated ginger
- 1½ tsp rice vinegar
- 1 tsp Sriracha hot sauce
- ¼ cup chopped fresh basil
Instructions
- Cook plant-based beef, mushrooms, onion, and garlic in a large nonstick skillet over medium heat, stirring until plant-based beef is browned and crumbly. Drain and return to skillet. Stir in coleslaw and green onions.
- Whisk together soy sauce, oil, ginger, vinegar, and Sriracha; add to skillet. Cook 5 minutes or until cabbage wilts; stir in basil.
