Grilled Buffalo Chicken Cobb Salad

Ingredients

  • ½ lb boneless, skinless chicken breasts
  • ½ Tbsp olive oil
  • 3 Tbsp Buffalo wing sauce
  • 3 cups chopped romaine lettuce
  • 1 hard-cooked egg, cut into wedges
  • 3 Tbsp crumbled blue cheese
  • ¼ cup shredded carrots
  • 6 Tbsp Ranch dressing

Instructions

  1. Preheat grill to medium-high heat. Rub chicken with oil; sprinkle with salt and pepper, if desired.
  2. Grill chicken, covered, 4 to 5 minutes per side or until done. Cut crosswise into strips, and toss with wing sauce.
  3. Place lettuce on a platter; top with chicken, egg, cheese, and carrots over lettuce. Drizzle with dressing.
