Pan-Seared Salmon Sandwiches
Sweet Potato ChipsIngredients
- 6 (4-oz) salmon fillets
- 2 Tbsp butter
- 2 Tbsp olive oil
- ½ cup olive-oil mayonnaise
- 2 Tbsp Dijon mustard
- 1 Tbsp minced fresh dill
- 2 tsp lemon zest
- 6 French steak rolls, split and toasted
- 3 cups baby arugula
Instructions
- Lightly sprinkle salmon with salt and pepper, if desired. Melt butter with oil in a large nonstick skillet over medium-high heat. Add salmon, in batches if necessary, and cook 4 to 5 minutes per side to desired doneness.
- Meanwhile, combine mayonnaise, mustard, dill, and lemon zest; spread over cut sides of rolls. Serve salmon on rolls with arugula.
