Pan-Seared Salmon Sandwiches

Ingredients

  • 6 (4-oz) salmon fillets
  • 2 Tbsp butter
  • 2 Tbsp olive oil
  • ½ cup olive-oil mayonnaise
  • 2 Tbsp Dijon mustard
  • 1 Tbsp minced fresh dill
  • 2 tsp lemon zest
  • 6 French steak rolls, split and toasted
  • 3 cups baby arugula

Instructions

  1. Lightly sprinkle salmon with salt and pepper, if desired. Melt butter with oil in a large nonstick skillet over medium-high heat. Add salmon, in batches if necessary, and cook 4 to 5 minutes per side to desired doneness.
  2. Meanwhile, combine mayonnaise, mustard, dill, and lemon zest; spread over cut sides of rolls. Serve salmon on rolls with arugula.

  • 1 (6-oz) pkg sweet potato chips

Side Dish Instructions

  1. Serve chips with sandwiches.
