Citrus-Avocado Salad
Cacio e Pepe Toast
Ingredients
- 3 Ruby Red grapefruit, sliced
- 3 navel oranges, sliced
- 2 avocados, sliced
- 1 (8-oz) block feta cheese, sliced
- 2 (0.5-oz) pkg fresh basil leaves
- ¾ cup coarsely chopped pistachios
- ⅓ cup balsamic vinaigrette
- ¾ tsp freshly ground pepper
Instructions
- Arrange grapefruit, oranges, avocados, cheese, and basil on 6 serving plates; top with nuts, and drizzle with vinaigrette. Sprinkle each serving with pepper.
Side Dish Ingredients
- 6 French steak rolls, halved lengthwise
- 2 Tbsp olive oil
- ½ cup freshly grated Parmesan cheese
- 1 tsp freshly ground pepper
Side Dish Instructions
- Preheat broiler. Arrange bread, cut sides up, on a baking sheet. Drizzle with oil; sprinkle with cheese and pepper. Broil 2 to 3 minutes or until bread is toasted and cheese is melted.
