Ingredients

  • 3 Ruby Red grapefruit, sliced
  • 3 navel oranges, sliced
  • 2 avocados, sliced
  • 1 (8-oz) block feta cheese, sliced
  • 2 (0.5-oz) pkg fresh basil leaves
  • ¾ cup coarsely chopped pistachios
  • ⅓ cup balsamic vinaigrette
  • ¾ tsp freshly ground pepper

Instructions

  1. Arrange grapefruit, oranges, avocados, cheese, and basil on 6 serving plates; top with nuts, and drizzle with vinaigrette. Sprinkle each serving with pepper.

Side Dish Ingredients

  • 6 French steak rolls, halved lengthwise
  • 2 Tbsp olive oil
  • ½ cup freshly grated Parmesan cheese
  • 1 tsp freshly ground pepper

Side Dish Instructions

  1. Preheat broiler. Arrange bread, cut sides up, on a baking sheet. Drizzle with oil; sprinkle with cheese and pepper. Broil 2 to 3 minutes or until bread is toasted and cheese is melted.
