Lasagna Roll-Ups

Ingredients

  • 1 (13.25-oz) pkg whole-grain lasagna noodles
  • 1 (10-oz) pkg frozen chopped spinach, thawed and squeezed dry
  • 1 (15-oz) carton part-skim ricotta cheese
  • 1 large egg
  • ½ cup freshly shredded Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1 (24-oz) jar roasted garlic pasta sauce, divided
  • 1 cup shredded part-skim mozzarella cheese

Instructions

  1. Preheat oven to 350°F. Cook pasta according to package directions.
  2. Combine spinach, ricotta, egg, Parmesan, garlic, and seasoning in a bowl.
  3. Spread 1 cup pasta sauce in bottom of a lightly greased 13- x 9-inch baking dish.
  4. Spread ricotta mixture over each lasagna noodle. Roll up, and place noodles, seam side down, over sauce in baking dish. Top with remaining sauce.
  5. Cover and bake 30 minutes. Uncover, sprinkle with mozzarella, and bake 15 minutes longer or until browned and bubbly.
