Ingredients
- 12 oz whole-grain rotini pasta (3 cups)
- 2 avocados, coarsely chopped
- 3 Tbsp lemon juice
- 2 cloves garlic
- 1 cup freshly grated Parmesan cheese, divided
Instructions
- Cook pasta in a large saucepan according to package directions; drain, reserving ½ cup pasta water.
- Process avocados, lemon juice, and garlic in a food processor until smooth, scraping sides as needed.
- Cook avocado mixture, pasta, ½ cup cheese, and enough pasta water to make a thin sauce in saucepan over medium-low heat 5 minutes until combined and sauce is slightly thickened.
- Serve sprinkled with remaining ½ cup cheese.

- 2 (9-oz) pkg chopped romaine lettuce
- ½ English cucumber, sliced
- ½ pint grape tomatoes, halved
- ½ cup olive oil vinaigrette
- ½ cup freshly grated Parmesan cheese
