Ingredients

  • 12 oz whole-grain rotini pasta (3 cups)
  • 2 avocados, coarsely chopped
  • 3 Tbsp lemon juice
  • 2 cloves garlic
  • 1 cup freshly grated Parmesan cheese, divided

Instructions

  1. Cook pasta in a large saucepan according to package directions; drain, reserving ½ cup pasta water.
  2. Process avocados, lemon juice, and garlic in a food processor until smooth, scraping sides as needed.
  3. Cook avocado mixture, pasta, ½ cup cheese, and enough pasta water to make a thin sauce in saucepan over medium-low heat 5 minutes until combined and sauce is slightly thickened.
  4. Serve sprinkled with remaining ½ cup cheese.

  • 2 (9-oz) pkg chopped romaine lettuce
  • ½ English cucumber, sliced
  • ½ pint grape tomatoes, halved
  • ½ cup olive oil vinaigrette
  • ½ cup freshly grated Parmesan cheese

  1. Toss together all ingredients in a serving bowl.
