Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 2 Tbsp olive oil
  • 6 oz fresh mozzarella cheese, cut into 6 slices
  • ¾ cup bruschetta topping
  • 6 Tbsp balsamic vinegar
  • ¼ cup chopped fresh basil (optional)

Instructions

  1. Preheat broiler. Cook chicken, in batches if necessary, in hot oil in a large cast-iron or overproof skillet 5 to 6 minutes per side or until done.
  2. Top with cheese; broil 2 minutes or until cheese melts. Top with bruschetta topping and balsamic vinegar. Sprinkle with basil, if desired.

Side Dish Ingredients

  • 6 cups spring mix
  • 3 peaches, sliced
  • 1 cup blueberries (or use raspberries or blackberries)
  • ⅓ cup olive oil vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a large bowl.
