Kung Pao Beef and Vegetables

Ingredients

  • 1½ lb flank steak (or use skirt steak)
  • 2 red or yellow bell peppers, cut into 1-inch pieces
  • 1 (16-oz) pkg sliced mushrooms
  • 1 (8-oz) pkg snow peas
  • 1 cup kung pao sauce

Instructions

  1. Cook beef in a large skillet coated with cooking spray over medium-high heat 5 minutes per side or to desired doneness. Let rest 5 minutes before thinly slicing across the grain.
  2. Meanwhile, cook bell peppers, mushrooms, and snow peas in another large skillet over medium-high heat 8 minutes or until browned and tender.
  3. Add beef and sauce to skillet with vegetables; cook 2 minutes or until thoroughly heated, tossing to coat.

  • 3 (3.5-oz) pouches boil-in-bag brown rice
