Mediterranean Farro Bowls

Ingredients
- 1½ cups quick-cooking farro
- 1 lb asparagus, trimmed and cut into 2-inch pieces
- 2 Tbsp olive oil
- 2 (15-oz) cans chickpeas, drained and rinsed
- 1 pint grape tomatoes, halved
- 1 cup crumbled feta cheese
- ¾ cup lemon vinaigrette
- ½ cup chopped fresh parsley
Instructions
- Cook farro according to package directions.
- Meanwhile, cook asparagus in hot oil in a large skillet over medium-high heat 5 minutes or until lightly browned.
- Toss together farro, asparagus, and remaining ingredients in a bowl.
