Ingredients

  • 1½ cups quick-cooking farro
  • 1 lb asparagus, trimmed and cut into 2-inch pieces
  • 2 Tbsp olive oil
  • 2 (15-oz) cans chickpeas, drained and rinsed
  • 1 pint grape tomatoes, halved
  • 1 cup crumbled feta cheese
  • ¾ cup lemon vinaigrette
  • ½ cup chopped fresh parsley

Instructions

  1. Cook farro according to package directions.
  2. Meanwhile, cook asparagus in hot oil in a large skillet over medium-high heat 5 minutes or until lightly browned.
  3. Toss together farro, asparagus, and remaining ingredients in a bowl.
