Chicken, Arugula, and Grilled Peach Salad

Ingredients

  • 2 Tbsp olive oil
  • 2 Tbsp honey
  • 6 peaches, pitted and halved
  • 2 (5-oz) pkg baby arugula
  • ½ cup balsamic vinaigrette
  • 3 cups shredded rotisserie chicken
  • 1 (4-oz) log goat cheese, crumbled
  • ½ cup chopped pecans

Instructions

  1. Preheat grill or grill pan to medium-high heat. Combine oil and honey; brush over cut sides of peaches.
  2. Grill peaches, covered, cut sides down, 3 to 4 minutes or until tender and lightly charred; cool and slice peaches.
  3. Toss together arugula and vinaigrette; divide among 6 plates. Top with peaches, chicken, cheese, and nuts.
