Ingredients
- 2 lb medium-size raw shrimp, peeled and deveined
- 2 tsp Creole seasoning
- 2 Tbsp olive oil
- ¼ cup butter
- 3 Tbsp lemon juice
- 1 cup heavy cream
- ⅔ cup freshly grated Parmesan cheese
Instructions
- Sprinkle shrimp with Creole seasoning. Cook shrimp in hot oil in a large skillet over medium-high heat 2 minutes per side or until shrimp turn pink. Remove from skillet, and keep warm.
- Melt butter in same skillet over medium heat; add lemon juice.
- Gradually whisk in cream; bring to a simmer, and cook 5 to 6 minutes or until reduced by one-fourth. Add cheese, stirring until melted. Stir in shrimp.
Side Dish Ingredients
- 4 cloves garlic, sliced
- 2 Tbsp extra virgin olive oil
- 2 (5-oz) pkg baby spinach
- 2 tsp lemon zest
- ½ tsp salt
Side Dish Instructions
- Cook garlic in hot oil in a large skillet over medium heat 30 seconds. Gradually add spinach, 1 pkg at a time; cook 5 minutes or until wilted. Stir in lemon zest and salt.
