Shepherd's Pie Mashed Potatoes

Ingredients

  • 1½ lb plant-based ground beef
  • 2 Tbsp olive oil
  • 1 (12-oz) pkg frozen mixed vegetables, thawed
  • 1 onion, chopped
  • 1 tsp pepper, divided
  • ¾ cup low-sodium vegetable broth
  • 1 (20-oz) pkg frozen mashed cauliflower 
  • ½ (24-oz) pkg refrigerated mashed potatoes

Instructions

  1. Cook plant-based beef in hot oil in a large skillet over medium-high heat 6 minutes. Add mixed vegetables, onion, and ½ tsp pepper; cook 8 minutes or until tender.
  2. Add broth; cook 3 minutes or until thickened.
  3. Meanwhile, cook cauliflower and heat potatoes according to package directions; stir together cauliflower, potatoes, and ½ tsp pepper.
  4. Serve beef mixture over cauliflower mixture.
