Shepherd's Pie Mashed Potatoes
Ingredients
- 1½ lb plant-based ground beef
- 2 Tbsp olive oil
- 1 (12-oz) pkg frozen mixed vegetables, thawed
- 1 onion, chopped
- 1 tsp pepper, divided
- ¾ cup low-sodium vegetable broth
- 1 (20-oz) pkg frozen mashed cauliflower
- ½ (24-oz) pkg refrigerated mashed potatoes
Instructions
- Cook plant-based beef in hot oil in a large skillet over medium-high heat 6 minutes. Add mixed vegetables, onion, and ½ tsp pepper; cook 8 minutes or until tender.
- Add broth; cook 3 minutes or until thickened.
- Meanwhile, cook cauliflower and heat potatoes according to package directions; stir together cauliflower, potatoes, and ½ tsp pepper.
- Serve beef mixture over cauliflower mixture.
