Mushroom and Tomato Stroganoff
Charred Green Onions and AsparagusIngredients
- 1 (16-oz) pkg sliced mushrooms
- ½ onion, diced
- 1 cup low-sodium chicken broth
- ½ (14.5-oz) can petite diced tomatoes, drained
- ½ (8-oz) can tomato sauce
- ½ tsp smoked paprika (or use regular)
- ½ tsp salt, divided
- ½ tsp pepper, divided
- ¼ tsp dried thyme
- 2 cloves garlic, minced
- 6 oz egg noodles
- 2 Tbsp butter
Instructions
- Stir together mushrooms, onion, broth, tomatoes, tomato sauce, paprika, ¼ tsp each salt and pepper, thyme, and garlic in a 3- to 4-quart slow cooker.
- Cover and cook on LOW 5 to 6 hours or until mushrooms are tender.
- Meanwhile, cook noodles according to package directions; stir in butter and ¼ tsp each salt and pepper. Serve mushrooms mixture over noodles.
Side Dish Ingredients
- 4 green onions, trimmed
- ¾ lb asparagus, trimmed
- 1 Tbsp olive oil
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Preheat grill or grill pan to high heat.
- Toss together green onions, asparagus, oil, salt, and pepper in a bowl. Arrange onions and asparagus in a single layer on a grill rack; grill 5 minutes or until beginning to char, turning often.
- Remove onions and asparagus from grill; cut into 1-inch pieces.
