Romesco Chicken
Basil-Garlic OrzoIngredients
- 6 (6-oz) boneless, skinless chicken breasts
- ¼ tsp salt
- 5 Tbsp olive oil, divided
- 2 (12-oz) jars roasted red bell peppers, drained
- ¼ cup peanut butter
- 2 Tbsp lemon juice
- 1 tsp paprika
- 1 (5-oz) pkg baby spinach
Instructions
- Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle chicken with salt; cook in 1 Tbsp hot oil in a large skillet over medium-high heat 5 to 6 minutes or until done.
- Meanwhile, process bell peppers, ¼ cup oil, peanut butter, lemon juice, and paprika in a blender or food processor until smooth, scraping sides as needed.
- Add bell pepper mixture and spinach to skillet with chicken. Cook 3 minutes or until sauce is thoroughly heated and spinach wilts.

- 2 cloves garlic, minced
- ½ tsp salt
Side Dish Instructions
- Cook orzo according to package directions.
- Toss orzo with remaining ingredients.
