Romesco Chicken

Basil-Garlic Orzo

Ingredients

  • 6 (6-oz) boneless, skinless chicken breasts
  • ¼ tsp salt
  • 5 Tbsp olive oil, divided
  • 2 (12-oz) jars roasted red bell peppers, drained
  • ¼ cup peanut butter
  • 2 Tbsp lemon juice
  • 1 tsp paprika
  • 1 (5-oz) pkg baby spinach

Instructions

  1. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle chicken with salt; cook in 1 Tbsp hot oil in a large skillet over medium-high heat 5 to 6 minutes or until done.
  2. Meanwhile, process bell peppers, ¼ cup oil, peanut butter, lemon juice, and paprika in a blender or food processor until smooth, scraping sides as needed.
  3. Add bell pepper mixture and spinach to skillet with chicken. Cook 3 minutes or until sauce is thoroughly heated and spinach wilts.

  • 2 Tbsp chopped fresh basil
  • 2 cloves garlic, minced
  • ½ tsp salt 

Side Dish Instructions

  1. Cook orzo according to package directions.
  2. Toss orzo with remaining ingredients.
