Turkey-Pesto Grilled Cheese Sandwiches

Ingredients
- 1½ Tbsp olive oil
- 8 (1-oz) slices whole wheat sandwich bread
- 3 Tbsp pesto
- ½ lb deli-sliced low-sodium oven-roasted turkey
- 1 cup shredded part-skim mozzarella cheese
- 1 heirloom tomato, thinly sliced
Instructions
- Brush oil over one side of each bread slice. Spread pesto on unoiled sides of 4 bread slices; layer with turkey, cheese, and tomato. Top with remaining bread slices, oiled sides up.
- Cook sandwiches, in batches, in a large griddle or nonstick skillet over medium heat 2 to 3 minutes per side or until browned and cheese is melted.
Side Dish Ingredients
- 3 cups quartered strawberries
- ¼ cup chopped fresh mint
- 2 Tbsp lemon juice
- 1 Tbsp honey
Side Dish Instructions
- Gently toss together all ingredients in a large bowl. Chill until ready to serve.
