Ingredients

  • 1½ Tbsp olive oil
  • 8 (1-oz) slices whole wheat sandwich bread
  • 3 Tbsp pesto
  • ½ lb deli-sliced low-sodium oven-roasted turkey
  • 1 cup shredded part-skim mozzarella cheese
  • 1 heirloom tomato, thinly sliced

Instructions

  1. Brush oil over one side of each bread slice. Spread pesto on unoiled sides of 4 bread slices; layer with turkey, cheese, and tomato. Top with remaining bread slices, oiled sides up.
  2. Cook sandwiches, in batches, in a large griddle or nonstick skillet over medium heat 2 to 3 minutes per side or until browned and cheese is melted.

Side Dish Ingredients

  • 3 cups quartered strawberries
  • ¼ cup chopped fresh mint
  • 2 Tbsp lemon juice
  • 1 Tbsp honey

Side Dish Instructions

  1. Gently toss together all ingredients in a large bowl. Chill until ready to serve.
