Ingredients
- 1 lb ground beef
- 1 small clove garlic, minced
- ¼ tsp salt
- ⅛ tsp pepper
- 1 red onion, thinly sliced
- 1 Tbsp olive oil
- 1 Tbsp balsamic vinegar
- 1 cup spring mix
- ½ (4-oz) log goat cheese, crumbled
Instructions
- Combine beef, garlic, salt, and pepper; shape into 3 patties.
- Heat a grill pan or a large nonstick skillet coated with cooking spray over medium-high heat. Cook patties 4 to 5 minutes per side or until no longer pink.
- Meanwhile, cook onion in hot oil in a skillet over medium heat, stirring occasionally, 10 minutes or until tender. Stir in vinegar; cook 1 minute or until vinegar evaporates.
- Divide salad greens among 3 plates; top each with a patty, onion, and cheese.

- ¼ cup chopped almonds
- 1½ Tbsp butter, melted

Side Dish Instructions
- Preheat oven to 375°F. Cook asparagus in boiling salted water to cover in a saucepan 3 minutes or until almost crisp-tender.
- Combine asparagus, nuts, butter, and salt on a rimmed baking sheet; spread in a single layer.
- Bake 5 to 6 minutes or until nuts are browned and asparagus is slightly blistered.
