Ingredients

  • 1 lb ground beef
  • 1 small clove garlic, minced 
  • ¼ tsp salt
  • ⅛ tsp pepper
  • 1 red onion, thinly sliced
  • 1 Tbsp olive oil
  • 1 Tbsp balsamic vinegar
  • 1 cup spring mix
  • ½ (4-oz) log goat cheese, crumbled

Instructions

  1. Combine beef, garlic, salt, and pepper; shape into 3 patties.
  2. Heat a grill pan or a large nonstick skillet coated with cooking spray over medium-high heat. Cook patties 4 to 5 minutes per side or until no longer pink.
  3. Meanwhile, cook onion in hot oil in a skillet over medium heat, stirring occasionally, 10 minutes or until tender. Stir in vinegar; cook 1 minute or until vinegar evaporates.
  4. Divide salad greens among 3 plates; top each with a patty, onion, and cheese.

Side Dish Ingredients

  • 1 lb asparagus, trimmed
  • ¼ cup chopped almonds
  • 1½ Tbsp butter, melted
  • ¼ tsp salt

Side Dish Instructions

  1. Preheat oven to 375°F. Cook asparagus in boiling salted water to cover in a saucepan 3 minutes or until almost crisp-tender.
  2. Combine asparagus, nuts, butter, and salt on a rimmed baking sheet; spread in a single layer.
  3. Bake 5 to 6 minutes or until nuts are browned and asparagus is slightly blistered.
