Ground Turkey Greek Salad

Ingredients

  • ½ (20-oz) pkg ground turkey
  • ½ Tbsp olive oil
  • ½ (14.5-oz) can fire-roasted diced tomatoes, drained
  • ½ Tbsp salt-free Greek seasoning
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 head romaine lettuce, chopped
  • ½ pint grape tomatoes, halved
  • ¾ cup crumbled feta cheese
  • 3 Tbsp olive oil vinaigrette

Instructions

  1. Cook turkey in hot oil in a large skillet over medium heat 8 to 10 minutes or until browned and crumbly. Stir in tomatoes, seasoning, salt, and pepper; cook 5 minutes.
  2. Divide lettuce between 2 serving plates. Top with turkey, tomatoes, and cheese. Drizzle with vinaigrette.
