White Bean Patties with Red Pepper Relish
Roasted Eggplant Salad with Tomato and Goat CheeseIngredients
- 1 (0.5-oz) pkg fresh basil, stems removed
- 2 cloves garlic
- 2 (15-oz) cans cannellini beans, drained and rinsed, divided
- 1 cup freshly grated Parmesan cheese
- 2 large eggs
- 1 cup panko breadcrumbs (preferably whole wheat), divided
- ¼ tsp salt
- ¼ tsp pepper
- ½ cup roasted red peppers, diced
- ⅓ cup pitted kalamata olives, chopped
- 2 green onions, chopped
- ¼ cup olive oil
Instructions
- Process basil and garlic in a food processor until finely chopped. Add 1 can of beans, cheese, eggs, ½ cup panko, salt, and pepper; process until combined, scraping down sides if needed.
- Mash remaining can of beans with a fork in a large bowl; stir in basil mixture. Shape mixture into 12 patties (½-inch thick) using wet hands.
- Place remaining ½ cup panko in a shallow dish; dredge patties. Place patties on a baking sheet; cover, and chill 10 minutes.
- Meanwhile, combine roasted peppers, olives, and onions in a small bowl.
- Cook patties, in batches if necessary, in hot oil in a large skillet over medium-high heat 4 minutes per side or until browned and thoroughly heated. Serve with red pepper relish.
Side Dish Ingredients
- 3 eggplants, cut into chunks
- ½ cup olive oil, divided
- 1 tsp pepper, divided
- ½ tsp salt, divided
- 2 Tbsp vegan balsamic vinegar
- 2 (5-oz) pkg spring mix
- 2 large tomatoes, cut into wedges
- 1 (4-oz) log goat cheese, crumbled (or use feta cheese)
Side Dish Instructions
- Preheat oven to 425°F. Toss together eggplant, ¼ cup oil, ½ tsp pepper, and ¼ tsp salt over a large greased rimmed baking sheet; spread in a single layer. Bake 20 minutes or until browned and tender.
- Whisk together ¼ cup oil, vinegar, ½ tsp pepper, and ¼ tsp salt in a small bowl.
- Arrange greens on a platter; top with eggplant, tomatoes, and cheese. Drizzle with dressing just before serving.
