Quick Chicken Almondine
Skillet BroccoliniIngredients
- ¾ lb boneless, skinless chicken breasts
- 1 Tbsp olive oil
- 1 Tbsp butter
- ⅓ cup slivered almonds, chopped (or use whole natural almonds)
- ½ tsp Italian seasoning (optional)
- 1 tsp lemon zest
Instructions
- Preheat oven to 425°F. Cut chicken into 2 pieces; season with salt and pepper, if desired. Heat oil in a skillet over medium-high heat. Cook chicken in hot oil 2 minutes per side or until browned.
- Place chicken on a foil-lined baking sheet. Bake 10 minutes or until done.
- Meanwhile, melt butter in a skillet over medium heat. Add nuts and, if desired, seasoning. Cook 2 to 3 minutes or until nuts are toasted and fragrant. Stir in lemon zest. Serve nut mixture over chicken.
Side Dish Ingredients
- 1 clove garlic, minced
- 1 Tbsp olive oil
- ½ lb Broccolini, trimmed (or use broccoli florets)
- ⅛ tsp salt
Side Dish Instructions
- Sauté garlic in hot oil in a large skillet 30 seconds. Add Broccolini; sauté 5 minutes or until crisp-tender. Sprinkle with salt.
