Old Bay Salmon
Cajun Dirty "Rice" Pilaf
Ingredients
- 2 lemons
- 6 (6-oz) salmon filets
- 2 Tbsp Old Bay seasoning
- 3 Tbsp olive oil
Instructions
- Grate zest and squeeze juice from lemons.
- Rub fish with seasoning. Cook, in batches, in hot oil in a nonstick skillet over medium-high heat 4 to 6 minutes per side or until flakes with a fork.
- Sprinkle fish with zest and drizzle with juice.
Side Dish Ingredients
- 2 (10-oz) pkg frozen riced cauliflower
- ½ lb ground sausage
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 stalks celery, chopped
- 2 cloves garlic, minced
- 2 tsp Cajun seasoning (or use Old Bay seasoning)
- 4 green onions, chopped
Side Dish Instructions
- Cook cauliflower according to package directions; drain.
- Cook sausage, onion, bell pepper, celery, and garlic in a large skillet over medium-high heat 5 to 6 minutes or until sausage is browned and crumbly.
- Add cauliflower; cook 3 minutes or until browned. Stir in green onions.
