Bruschetta Pasta

Ingredients
- 1 (16-oz) pkg whole-grain linguine (or use spaghetti)
- 1 (10-oz) pkg baby spinach
- 4 cloves garlic, minced
- 3 Tbsp olive oil
- 3 Tbsp balsamic vinegar
- 4 tomatoes, diced
- ¼ cup chopped fresh basil
- ½ tsp salt
- ½ tsp pepper
- 1½ cups freshly grated Parmesan cheese
Instructions
- Cook pasta according to package directions; drain, reserving ½ cup pasta water.
- Cook spinach and garlic in hot oil in a large nonstick skillet over medium heat, stirring often, until spinach wilts.
- Add vinegar, tomatoes, basil, salt, and pepper; cook 1 minute. Add pasta and enough pasta water to make a thin sauce; toss. Sprinkle with cheese.
