Philly Cheesesteak Tacos

Ingredients

  • ½ lb flank steak
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 Tbsp olive oil, divided
  • 1 onion, sliced 
  • 1 red or green bell pepper, cut into strips
  • 4 corn tortillas, heated
  • ½ cup shredded mozzarella cheese (or use provolone cheese)

Instructions

  1. Sprinkle steak with salt and pepper. Cook in 1 tsp hot oil in a large skillet over medium-high heat 4 to 5 minutes per side or to desired doneness. Remove from skillet. Let stand 5 minutes; thinly slice across the grain.
  2. Cook onion and bell pepper in 2 tsp hot oil in same skillet over medium-high heat 8 minutes or until tender. Add beef to skillet, tossing to combine.
  3. Serve beef mixture in tortillas; sprinkle with cheese.
