Greek Chicken and Vegetables with Orzo

Ingredients
- ½ lb boneless, skinless chicken breasts
- 1 Tbsp olive oil, divided
- ¾ tsp Greek seasoning, divided
- 2 carrots, cut into chunks
- 1 zucchini, cut into chunks
- 1 cup grape tomatoes
- ½ cup orzo (preferably whole wheat)
Instructions
- Preheat oven to 350°F. Drizzle chicken with 1 tsp oil and sprinkle with ½ tsp seasoning on a greased pan. Toss carrots, zucchini, and tomatoes with 2 tsp oil and ¼ tsp seasoning.
- Arrange vegetables around chicken on pan. Bake 25 to 30 minutes or until chicken is done and vegetables are tender.
- Meanwhile, cook orzo according to package directions. Serve chicken and vegetables with orzo.
