Greek Chicken and Vegetables with Orzo

Ingredients

  • ½ lb boneless, skinless chicken breasts
  • 1 Tbsp olive oil, divided
  • ¾ tsp Greek seasoning, divided
  • 2 carrots, cut into chunks
  • 1 zucchini, cut into chunks
  • 1 cup grape tomatoes
  • ½ cup orzo (preferably whole wheat)

Instructions

  1. Preheat oven to 350°F. Drizzle chicken with 1 tsp oil and sprinkle with ½ tsp seasoning on a greased pan. Toss carrots, zucchini, and tomatoes with 2 tsp oil and ¼ tsp seasoning.
  2. Arrange vegetables around chicken on pan. Bake 25 to 30 minutes or until chicken is done and vegetables are tender.
  3. Meanwhile, cook orzo according to package directions. Serve chicken and vegetables with orzo.
