Chicken Fettuccine
Simple Caesar SaladIngredients
- 1½ (12-oz) pkg gluten-free fettuccine
- 8 slices bacon, chopped
- 1½ lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 (15-oz) jars gluten-free Alfredo sauce
- 1 (12-oz) pkg frozen green peas
Instructions
- Cook pasta according to package directions; drain, reserving ½ cup pasta water.
- Meanwhile, cook bacon in a large skillet over medium heat until crisp; drain on paper towels, reserving drippings in skillet.
- Season chicken lightly with salt and pepper. Add chicken to hot drippings in skillet; increase heat to medium-high, and cook 6 to 8 minutes or until done.
- Add Alfredo sauce, peas, and reserved pasta water. Cook until thoroughly heated; toss with pasta. Sprinkle with bacon.

- 2 (10-oz) pkg chopped romaine lettuce
- ½ cup gluten-free Caesar dressing
- ¼ cup freshly grated Parmesan cheese
- 1 (4-oz) pkg gluten-free seasoned croutons
Side Dish Instructions
- Toss together lettuce and dressing in a large bowl; sprinkle with cheese and croutons.
