Chicken Fettuccine

Simple Caesar Salad

Ingredients

  • 1½ (12-oz) pkg gluten-free fettuccine
  • 8 slices bacon, chopped
  • 1½ lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 (15-oz) jars gluten-free Alfredo sauce
  • 1 (12-oz) pkg frozen green peas

Instructions

  1. Cook pasta according to package directions; drain, reserving ½ cup pasta water.
  2. Meanwhile, cook bacon in a large skillet over medium heat until crisp; drain on paper towels, reserving drippings in skillet.
  3. Season chicken lightly with salt and pepper. Add chicken to hot drippings in skillet; increase heat to medium-high, and cook 6 to 8 minutes or until done.
  4. Add Alfredo sauce, peas, and reserved pasta water. Cook until thoroughly heated; toss with pasta. Sprinkle with bacon.

Side Dish Ingredients

  • 2 (10-oz) pkg chopped romaine lettuce
  • ½ cup gluten-free Caesar dressing
  • ¼ cup freshly grated Parmesan cheese
  • 1 (4-oz) pkg gluten-free seasoned croutons

Side Dish Instructions

  1. Toss together lettuce and dressing in a large bowl; sprinkle with cheese and croutons.
