Asian Meatballs
Broccoli Rice and Gingered Snow Peas
Ingredients
- 3 Tbsp almond flour
- 1 large egg, lightly beaten
- 2 Tbsp minced garlic
- ½ tsp ground ginger
- 1 lb ground pork (or use ground beef or turkey)
- ¼ cup chopped fresh cilantro
- 2 green onions, chopped
- ½ tsp salt
- 5 Tbsp gluten-free soy sauce, divided
- 2 Tbsp sesame oil
- 2 Tbsp water
- 2 tsp lime juice
Instructions
- Preheat oven to 500°F. Combine almond flour, egg, garlic, ginger, pork, cilantro, onions, salt, and 1 Tbsp soy sauce. Shape into large meatballs, using ¼ cup mixture for each.
- Place meatballs on a rack in a lightly greased broiler pan. Bake on center oven rack 15 minutes or until no longer pink in centers, turning once or twice.
- Combine ¼ cup soy sauce, oil, water, and lime juice in a small bowl. Drizzle over meatballs before serving.
Side Dish Ingredients
- 2 (10-oz) pkg frozen riced broccoli (or use frozen riced cauliflower)
- 3 Tbsp sesame oil, divided
- 2 Tbsp gluten-free soy sauce
- 1 (8-oz) pkg snow peas
- 2 tsp ginger paste
Side Dish Instructions
- Cook broccoli according to package directions. Stir in 1 Tbsp oil and soy sauce.
- Cook snow peas and ginger paste in 2 Tbsp hot oil in a large skillet over medium-high heat 4 minutes or until tender, stirring often. Season with salt to taste.
