Ingredients
- 1 (8-oz) boneless, skinless chicken breast
- 2 Tbsp olive-oil mayonnaise
- ¾ tsp Greek seasoning, divided
- ½ tsp dried oregano
- ¾ lb red potatoes, cut into wedges
- 2 Tbsp olive oil vinaigrette
- 2 Tbsp freshly grated Parmesan cheese
- ¼ cup tzatziki sauce
Instructions
- Preheat oven to 425°F. Place a rimmed baking sheet in oven while preheating.
- Cut chicken in half crosswise and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Combine mayonnaise, ½ tsp Greek seasoning, and oregano; brush over chicken.
- Toss together potatoes, vinaigrette, and ¼ tsp Greek seasoning. Carefully arrange chicken and potatoes on hot pan. Bake 20 to 30 minutes or until chicken is done and potatoes are browned and tender.
- Serve chicken and potatoes with tzatziki sauce.
