Brown Rice and Sesame Sugar Snap Peas

Ingredients

  • 2 (6-oz) boneless, skinless chicken breasts
  • 1 tsp olive oil
  • ½ tsp lime zest
  • ⅛ tsp salt
  • ¼ cup peanut sauce

Instructions

  1. Preheat grill, grill pan, or cast-iron skillet to medium-high heat. Rub chicken with oil; sprinkle with lime zest and salt.
  2. Cook chicken in hot skillet 5 to 6 minutes per side or until chicken is done. Serve chicken with peanut sauce.

  • 1 (3.5-oz) pouch boil-in-bag brown rice (or use jasmine rice)
  • 1 (8-oz) pkg sugar snap peas
  • 1 Tbsp low-sodium soy sauce
  • 1 tsp dark sesame oil
  • 2 tsp sesame seeds

  1. Cook rice and sugar snap peas according to package directions.
  2. Toss together sugar snap peas, soy sauce, and sesame oil; sprinkle with sesame seeds.
