Tomato-Avocado Eggs with Bacon

Ingredients

  • 4 slices center cut bacon
  • 8 large eggs
  • ½ tsp salt
  • ¼ cup shredded reduced-fat Cheddar cheese
  • 1 cup grape tomatoes, halved
  • 1 small avocado, sliced

Instructions

  1. Cook bacon in a large nonstick skillet over medium heat until crisp; drain, reserving 2 Tbsp drippings in skillet. Crumble bacon.
  2. Whisk eggs and salt until frothy. Add eggs to hot drippings in skillet; cook over medium-high heat, without stirring, until beginning to set on bottom. Cook, stirring constantly, until thickened and set.
  3. Sprinkle with cheese and bacon. Top with tomatoes and avocado before serving.

  • 4 (1-oz) slices whole-grain bread

Side Dish Instructions

  1.  Serve toast with eggs.
