Tomato-Avocado Eggs with Bacon
Whole Wheat Toast
Ingredients
- 4 slices center cut bacon
- 8 large eggs
- ½ tsp salt
- ¼ cup shredded reduced-fat Cheddar cheese
- 1 cup grape tomatoes, halved
- 1 small avocado, sliced
Instructions
- Cook bacon in a large nonstick skillet over medium heat until crisp; drain, reserving 2 Tbsp drippings in skillet. Crumble bacon.
- Whisk eggs and salt until frothy. Add eggs to hot drippings in skillet; cook over medium-high heat, without stirring, until beginning to set on bottom. Cook, stirring constantly, until thickened and set.
- Sprinkle with cheese and bacon. Top with tomatoes and avocado before serving.
