Greek Pork Salad

Ingredients

  • 1 lb center cut pork loin chops, cut into ½-inch pieces
  • ½ Tbsp Greek seasoning
  • 1 Tbsp olive oil
  • 5 cups chopped romaine lettuce
  • ½ cucumber, diced
  • 2 Roma tomatoes, chopped
  • ½ cup crumbled feta cheese
  • 2 green onions, sliced
  • ½ cup Greek vinaigrette dressing

Instructions

  1. Toss pork with Greek seasoning. Heat oil in a large skillet over medium-high heat; add pork. Cook, stirring occasionally, 4 to 6 minutes or until browned; set aside.
  2. Toss together romaine, cucumber, tomatoes, cheese, and onions in a large bowl. Add Greek dressing, and toss. Top each serving with pork.
