Loaded Pork and Potato Casserole
Chopped Garden SaladIngredients
- 1 (32-oz) container refrigerated mashed potatoes
- 1 (8-oz) carton sour cream
- 1 cup sliced green onions
- 3 cups reserved shredded pork (from Pork with Tomatoes and Green Chiles recipe)
- 2 cups shredded colby-Jack cheese
Instructions
- Preheat oven to 375°F. Stir together mashed potatoes, sour cream, and green onions. Spread mixture into a greased 13- x 9-inch casserole dish.
- Top with pork and cheese. Bake 20 minutes or until thoroughly heated.

- 1 (12-oz) pkg chopped classic lettuce mix
- 2 tomatoes, chopped
- ½ cup balsamic vinaigrette
Side Dish Instructions
- Toss together all ingredients in a large bowl.
