Loaded Pork and Potato Casserole

Ingredients

  • 1 (32-oz) container refrigerated mashed potatoes
  • 1 (8-oz) carton sour cream
  • 1 cup sliced green onions
  • 3 cups reserved shredded pork (from Pork with Tomatoes and Green Chiles recipe)
  • 2 cups shredded colby-Jack cheese

Instructions

  1. Preheat oven to 375°F. Stir together mashed potatoes, sour cream, and green onions. Spread mixture into a greased 13- x 9-inch casserole dish.
  2. Top with pork and cheese. Bake 20 minutes or until thoroughly heated.

Side Dish Ingredients

  • 1 (12-oz) pkg chopped classic lettuce mix
  • 2 tomatoes, chopped
  • ½ cup balsamic vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a large bowl.
