Country Captain Chicken

Broccoli Florets and Steamed White Rice

Ingredients

  • 1 onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 2 lb boneless, skinless chicken thighs
  • ½ tsp salt
  • ½ tsp pepper
  • 1 (28-oz) can crushed tomatoes
  • 1 (6-oz) can tomato paste
  • ¼ cup low-sodium chicken broth
  • 1 Tbsp curry powder
  • ½ tsp dried thyme
  • 3 cloves garlic, minced
  • ½ cup raisins
  • ½ cup sliced almonds

Instructions

  1. Place onion and bell pepper in a lightly greased 5- to 7-quart slow cooker. Place chicken in slow cooker; sprinkle with salt and pepper.
  2. Combine tomatoes, tomato paste, broth, curry, thyme, and garlic; pour over chicken.
  3. Cover and cook on LOW 6 to 7 hours or until chicken is tender and done.
  4. Serve chicken over Steamed White Rice recipe; top with raisins and nuts.

Side Dish Ingredients

  • 1½ cups uncooked long-grain white rice
  • 2 (12-oz) pkg broccoli florets
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Cook broccoli in boiling water to cover 3 to 5 minutes or until tender; drain. Sprinkle with salt and pepper.
