Country Captain Chicken
Broccoli Florets and Steamed White Rice
Ingredients
- 1 onion, thinly sliced
- 1 green bell pepper, thinly sliced
- 2 lb boneless, skinless chicken thighs
- ½ tsp salt
- ½ tsp pepper
- 1 (28-oz) can crushed tomatoes
- 1 (6-oz) can tomato paste
- ¼ cup low-sodium chicken broth
- 1 Tbsp curry powder
- ½ tsp dried thyme
- 3 cloves garlic, minced
- ½ cup raisins
- ½ cup sliced almonds
Instructions
- Place onion and bell pepper in a lightly greased 5- to 7-quart slow cooker. Place chicken in slow cooker; sprinkle with salt and pepper.
- Combine tomatoes, tomato paste, broth, curry, thyme, and garlic; pour over chicken.
- Cover and cook on LOW 6 to 7 hours or until chicken is tender and done.
- Serve chicken over Steamed White Rice recipe; top with raisins and nuts.
Side Dish Ingredients
- 1½ cups uncooked long-grain white rice
- 2 (12-oz) pkg broccoli florets
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Cook rice according to package directions.
- Cook broccoli in boiling water to cover 3 to 5 minutes or until tender; drain. Sprinkle with salt and pepper.
