One Dish Dinner
Stir-Fried Pork and Carrot "Noodle" Bowls
Ingredients
- 8 large carrots
- ½ cup water
- 3 Tbsp coconut aminos
- 2 green onions, chopped
- 2 Tbsp raw honey
- 2 tsp sesame oil
- 1 Tbsp arrowroot
- 2 Tbsp coconut oil
- 1 Tbsp grated ginger
- 3 cloves garlic, minced
- 2 lb pork tenderloins, cut into 1-inch pieces
- ½ cup chopped raw almonds
Instructions
- Cut carrots into noodle-shaped strands using a spiralizer, or cut carrots lengthwise into thin ribbons using a vegetable peeler.
- Bring water, coconut aminos, onions, honey, sesame oil, and arrowroot to a boil in a small saucepan over medium heat, stirring often; reduce heat to a simmer, and cook 2 minutes or until sauce is thickened. Remove from heat.
- Melt coconut oil in a large skillet over medium-high heat; add ginger and garlic, and sauté 2 minutes. Add pork, and sauté 6 minutes or until pork is no longer pink.
- Pour sauce and nuts into skillet; cook 1 minute, stirring gently. Stir in carrots.
