Stir-Fried Pork and Carrot "Noodle" Bowls

Ingredients

  • 8 large carrots
  • ½ cup water
  • 3 Tbsp coconut aminos
  • 2 green onions, chopped
  • 2 Tbsp raw honey
  • 2 tsp sesame oil
  • 1 Tbsp arrowroot
  • 2 Tbsp coconut oil
  • 1 Tbsp grated ginger
  • 3 cloves garlic, minced
  • 2 lb pork tenderloins, cut into 1-inch pieces
  • ½ cup chopped raw almonds

Instructions

  1. Cut carrots into noodle-shaped strands using a spiralizer, or cut carrots lengthwise into thin ribbons using a vegetable peeler.
  2. Bring water, coconut aminos, onions, honey, sesame oil, and arrowroot to a boil in a small saucepan over medium heat, stirring often; reduce heat to a simmer, and cook 2 minutes or until sauce is thickened. Remove from heat.
  3. Melt coconut oil in a large skillet over medium-high heat; add ginger and garlic, and sauté 2 minutes. Add pork, and sauté 6 minutes or until pork is no longer pink.
  4. Pour sauce and nuts into skillet; cook 1 minute, stirring gently. Stir in carrots.
