Kale-Sausage Crustless Quiche

Ingredients

  • ½ lb ground Italian sausage, casings removed
  • 2 Tbsp olive oil
  • 1 (5-oz) pkg baby kale
  • ½ cup shredded Cheddar cheese
  • 6 large eggs
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions

  1. Preheat oven to 375°F. Cook sausage in hot oil in a large skillet over medium heat 5 to 6 minutes or until sausage is browned and crumbly.
  2. Add kale; cook 1 to 2 minutes or until wilted. Remove from heat, and spread mixture in a greased 9-inch pie plate; sprinkle with cheese. Place pie plate on a rimmed baking sheet.
  3. Whisk together eggs, salt, and pepper; pour over sausage mixture.
  4. Bake 35 minutes or until center is set. Cool. Cut into wedges.
