Kale-Sausage Crustless Quiche
Ingredients
- ½ lb ground Italian sausage, casings removed
- 2 Tbsp olive oil
- 1 (5-oz) pkg baby kale
- ½ cup shredded Cheddar cheese
- 6 large eggs
- ¼ tsp salt
- ¼ tsp pepper
Instructions
- Preheat oven to 375°F. Cook sausage in hot oil in a large skillet over medium heat 5 to 6 minutes or until sausage is browned and crumbly.
- Add kale; cook 1 to 2 minutes or until wilted. Remove from heat, and spread mixture in a greased 9-inch pie plate; sprinkle with cheese. Place pie plate on a rimmed baking sheet.
- Whisk together eggs, salt, and pepper; pour over sausage mixture.
- Bake 35 minutes or until center is set. Cool. Cut into wedges.
