Ingredients

  • 6 Tbsp sliced almonds
  • 2 cups shredded rotisserie chicken
  • 2 (5-oz) pkg chopped romaine lettuce
  • 1 cup shredded carrots
  • 1 English cucumber, halved lengthwise and thinly sliced
  • ⅓ cup sesame oil (or use olive oil)
  • 2 Tbsp low-sodium soy sauce
  • 1 Tbsp grated ginger
  • 1 clove garlic, minced

Instructions

  1. Toast nuts in a dry skillet 3 to 4 minutes or until fragrant.
  2. Combine chicken, lettuce, carrots, and cucumber in a large bowl.
  3. Whisk together oil, soy sauce, ginger, and garlic. Pour over salad; toss. Sprinkle with nuts.
