Asian Chicken Salad
Ingredients
- 6 Tbsp sliced almonds
- 2 cups shredded rotisserie chicken
- 2 (5-oz) pkg chopped romaine lettuce
- 1 cup shredded carrots
- 1 English cucumber, halved lengthwise and thinly sliced
- ⅓ cup sesame oil (or use olive oil)
- 2 Tbsp low-sodium soy sauce
- 1 Tbsp grated ginger
- 1 clove garlic, minced
Instructions
- Toast nuts in a dry skillet 3 to 4 minutes or until fragrant.
- Combine chicken, lettuce, carrots, and cucumber in a large bowl.
- Whisk together oil, soy sauce, ginger, and garlic. Pour over salad; toss. Sprinkle with nuts.
