Ingredients

  • ½ cup mayonnaise
  • 1 Tbsp prepared horseradish
  • 2 tsp lemon juice
  • 1 lb deli-sliced roast beef
  • 2 large tomatoes, cut into 8 slices
  • 1 cup chopped romaine lettuce
  • ¼ cup thinly sliced red onion

Instructions

  1. Combine mayonnaise, horseradish, and lemon juice.
  2. Arrange roast beef slices in 8 stacks. Top with mayonnaise mixture, tomato, lettuce, and onion. Roll up; secure with wooden picks.

  • 2 English cucumbers
  • 2 carrots
  • 2½ Tbsp extra virgin olive oil
  • 1 Tbsp red wine vinegar
  • ¼ tsp salt

Side Dish Instructions

  1. Cut cucumbers and carrots into thin slices; place in a bowl.
  2. Whisk together oil, vinegar, and salt. Pour vinaigrette over cucumbers and carrots; toss.
