Apple Butter Pork Chops

Ingredients

  • 1½ lb boneless center cut pork loin chops
  • ¾ tsp dried thyme
  • 2 Tbsp olive oil, divided
  • 2 apples, sliced
  • 1 cup apple butter
  • ½ cup heavy cream

Instructions

  1. Sprinkle pork with thyme and desired amount of salt. Cook pork in 1 Tbsp hot oil in a large skillet over medium-high heat 4 to 5 minutes per side or until done. Remove pork from skillet; keep warm.
  2. Cook apples in 1 Tbsp hot oil in same skillet over medium-high heat 5 to 7 minutes or until tender. Add apple butter, cream, and pork to skillet. Cook 2 minutes or until thickened.

Side Dish Ingredients

  • 2 cups long-grain white rice (see Note)
  • 2 Tbsp shredded Parmesan cheese
  • 1 Tbsp olive oil
  • 1 tsp Italian seasoning
  • 2 (12-oz) pkg frozen broccoli

Side Dish Instructions

  1. Steam rice according to package directions; toss with cheese, oil, and Italian seasoning. Season with salt and pepper to taste.
  2. Steam broccoli according to package directions; season with salt and pepper to taste.
