Nashville Hot Chicken

Ingredients

  • 2 large eggs
  • 2 Tbsp low-fat buttermilk
  • ½ tsp salt
  • ½ tsp pepper
  • 1 cup panko breadcrumbs 
  • 3 lb bone-in chicken thighs 
  • ⅓ cup canola oil
  • 3 Tbsp butter
  • 2 Tbsp cayenne pepper
  • 1 Tbsp honey
  • ½ tsp chili powder
  • ½ tsp garlic salt
  • ½ tsp smoked paprika

Instructions

  1. Preheat oven to 400°F. Whisk together eggs, buttermilk, salt, and pepper in a shallow bowl. Place panko in a separate shallow bowl. Dip chicken into egg mixture; dredge in panko.
  2. Arrange chicken on a greased wire rack on a rimmed baking sheet; coat lightly with cooking spray. Bake 45 to 55 minutes or until chicken is done.
  3. Melt oil and butter in a small saucepan over medium heat. Stir in cayenne, honey, chili powder, garlic salt, and paprika; brush over chicken. Let stand 10 minutes before serving.
