Parmesan Chicken

Ingredients
- 6 (6-oz) boneless, skinless chicken breasts
- ¾ cup freshly grated Parmesan cheese
- ¾ cup panko breadcrumbs
- 1 tsp Italian seasoning
- ½ cup mayonnaise
Instructions
- Preheat oven to 425°F. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Place chicken in a greased 13- x 9-inch baking dish.
- Stir together cheese, panko, and Italian seasoning. Spread mayonnaise on chicken; press cheese mixture on top of chicken. Bake 20 minutes or until chicken is done.

- 1 (10-oz) pkg spinach
- ⅓ cup crumbled feta cheese
- ⅓ cup sliced green olives
- ⅓ cup light olive oil vinaigrette
Side Dish Instructions
- Toss together all ingredients in a large bowl.
