Parmesan Chicken

Ingredients

  • 6 (6-oz) boneless, skinless chicken breasts
  • ¾ cup freshly grated Parmesan cheese
  • ¾ cup panko breadcrumbs
  • 1 tsp Italian seasoning
  • ½ cup mayonnaise

Instructions

  1. Preheat oven to 425°F. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Place chicken in a greased 13- x 9-inch baking dish.
  2. Stir together cheese, panko, and Italian seasoning. Spread mayonnaise on chicken; press cheese mixture on top of chicken. Bake 20 minutes or until chicken is done.

  • 1 (10-oz) pkg spinach
  • ⅓ cup crumbled feta cheese
  • ⅓ cup sliced green olives
  • ⅓ cup light olive oil vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a large bowl.
