Soft-Serve Berry Ice Cream
Ingredients
- 4 cups frozen mixed berries (see Note)
- 1 cup coconut milk
- 1 Tbsp sugar or zero-calorie sweetener
Instructions
- Process all ingredients in a food processor until smooth. Mixture will be a smoothie-like texture. Pour into a 9- x 5-inch loaf pan; freeze 1 hour, stirring after 30 minutes and then returning dessert to freezer to harden.
- Scoop ice cream into bowls or cones to serve.
