Ingredients

  • 2 lb sirloin steak, thinly sliced
  • ½ tsp salt
  • ½ tsp pepper
  • 3 Tbsp vegetable oil, divided
  • 4 cloves garlic, minced
  • 2 bell peppers, thinly sliced
  • 1 onion, thinly sliced
  • ¾ cup low-sodium beef broth
  • ¼ cup balsamic vinegar

Instructions

  1. Sprinkle steak with salt and pepper. Cook steak in 1 Tbsp hot oil in a Dutch oven over medium-high heat 6 minutes or until browned. Add garlic; cook 1 minute. Remove beef mixture from pot.
  2. Add 2 Tbsp oil, bell peppers, and onion to pot. Cook 6 minutes, stirring occasionally, or until vegetables are tender.
  3. Stir in beef mixture, broth, and vinegar. Reduce heat, and simmer 5 minutes or until mixture thickens.

Side Dish Ingredients

  • 6 cups chopped romaine lettuce
  • 1¼ cups halved grape tomatoes
  • ½ cup blue cheese dressing

Side Dish Instructions

  1. Toss together all ingredients in a bowl. Season with pepper to taste.
