Beef and Cheese Tortellini
Roasted Cauliflower and BroccoliIngredients
- ½ lb plant-based ground beef
- 1 (14.5-oz) can fire-roasted crushed tomatoes
- ¾ cup marinara sauce
- 1½ tsp Italian seasoning
- 1 (9-oz) pkg refrigerated cheese tortellini
- 2 Tbsp chopped fresh basil
Instructions
- Cook plant-based beef in a large skillet over medium heat 8 minutes or until browned and crumbly; drain well, and transfer to a 3- to 4-quart slow cooker.
- Stir in tomatoes, marinara sauce, and Italian seasoning. Cover and cook on LOW 6 to 7 hours.
- Stir in tortellini. Cover and cook 20 minutes or until pasta is tender. Sprinkle with basil.
Side Dish Ingredients
- ½ (12-oz) pkg cauliflower florets
- ½ (12-oz) pkg broccoli florets
- 1 Tbsp olive oil
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Preheat oven to 375°F.
- Toss together all ingredients on a large rimmed baking sheet; spread in a single layer. Bake 18 to 20 minutes or until tender.
