Taco-Stuffed Avocados

Ingredients

  • 4 avocados
  • 1 lb ground beef
  • 1 Tbsp taco seasoning mix
  • ½ cup shredded Cheddar cheese
  • 2 Roma tomatoes, chopped
  • 2 green onions, chopped (optional)
  • Lime wedges (optional)

Instructions

  1. Preheat oven to 400°F. Cut avocados in half; remove pits. Place avocados, cut sides up, on a rimmed baking sheet or in an 11- x 7-inch baking dish.
  2. Cook beef in a large nonstick skillet over medium-high heat 8 minutes or until browned and crumbly. Add taco seasoning; cook 1 minute longer.
  3. Spoon taco meat into avocado halves. Sprinkle with cheese; bake 10 minutes or until cheese melts.
  4. Top avocados with tomatoes and, if desired, onions. Serve with lime wedges, if desired.

  • 4 cups torn butter lettuce
  • 2 radishes, thinly sliced
  • ¼ cup olive oil vinaigrette

  1. Toss together lettuce, radishes, and vinaigrette in a bowl.
