Taco-Stuffed Avocados
Butter Lettuce with Radishes
Ingredients
- 4 avocados
- 1 lb ground beef
- 1 Tbsp taco seasoning mix
- ½ cup shredded Cheddar cheese
- 2 Roma tomatoes, chopped
- 2 green onions, chopped (optional)
- Lime wedges (optional)
Instructions
- Preheat oven to 400°F. Cut avocados in half; remove pits. Place avocados, cut sides up, on a rimmed baking sheet or in an 11- x 7-inch baking dish.
- Cook beef in a large nonstick skillet over medium-high heat 8 minutes or until browned and crumbly. Add taco seasoning; cook 1 minute longer.
- Spoon taco meat into avocado halves. Sprinkle with cheese; bake 10 minutes or until cheese melts.
- Top avocados with tomatoes and, if desired, onions. Serve with lime wedges, if desired.

- 2 radishes, thinly sliced
- ¼ cup olive oil vinaigrette
